Filleting Fish and the Like----

We are truly the kind that like to experiment with the local fare wherever we are. Ed is the best to try it all.

FILLETING FISH!

We visit the fish market (he would rather have caught it), buy fish and then he comes home and fillets it; this Saturday we were with the Deckers. This one is a large red snapper...very good!

And....here comes Elder Terry. We are at our old flat, at which, the Deckers and Terrys now live. We know that it has the perfect spot in which to fillet fish!

SHREDDING COCONUTS!

CARVING FIJI PUMPKINS!

LEMONS! AND GUAVA!

In our new yard, we have a huge lemon tree and a guava tree out back. The guava are about over; but, we have made syrup and have juice ready-made in our refrigerator. The lemons are just getting ripe; so we are juicing them and putting the juice into ice trays for later...yumm! We will make some lemon bars and other desserts! Maybe even some lemon meringue pies-- remember, Grandma Jolley used to make the best!

THE SWEET POTATO

Their are several varieties of sweet potatoes in Fiji; this one is the white flesh one (not quite as much flavor as the deep orange one that comes on later). We get them from the school farm; along with green beans, squash, pumpkin, cucumbers and eggs! Out of this one big ugly sweet potato,we get this many fries... so yummy!
